- 1 can (10.5 oz / 300 g) cream of chicken soup (or cream of mushroom)
- 1 cup (240 ml) milk
- 1 1/2 cups (150 g) shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
- 1/4 cup (30 g) grated Parmesan cheese (optional, for topping)
- 1/2 cup breadcrumbs (optional, for a crunchy topping)
Instructions
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch (23×33 cm) baking dish with cooking spray or butter.
- Prepare the ingredients:
- Steam or blanch the broccoli florets for 3–4 minutes until slightly tender but still vibrant green.
- Cook the rice according to package instructions if it’s not already prepared.
- Sauté the aromatics:
- Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.
- Stir in the minced garlic and cook for another 30 seconds until fragrant. Remove from heat.
- Mix the casserole ingredients:
- In a large mixing bowl, combine the cooked chicken, cooked rice, broccoli, sautéed onions, garlic, cream of chicken soup, milk, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper.
- Stir until everything is well coated and combined.
- Assemble the casserole:
- Transfer the mixture to the prepared baking dish and spread it evenly.
- Sprinkle the top with grated Parmesan cheese and breadcrumbs for a crispy topping (optional).
- Bake:
- Bake uncovered in the preheated oven for 25–30 minutes, or until the cheese is melted, the casserole is bubbly, and the top is lightly golden.
