  • 2 cups (400 g) cooked white rice (or brown rice)
  • 2 cups (200 g) broccoli florets, steamed or blanched
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz / 300 g) cream of chicken soup (or cream of mushroom)
  • 1 cup (240 ml) milk
  • 1 1/2 cups (150 g) shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1/4 cup (30 g) grated Parmesan cheese (optional, for topping)
  • 1/2 cup breadcrumbs (optional, for a crunchy topping)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch (23×33 cm) baking dish with cooking spray or butter.
  2. Prepare the ingredients:
    • Steam or blanch the broccoli florets for 3–4 minutes until slightly tender but still vibrant green.
    • Cook the rice according to package instructions if it’s not already prepared.
  3. Sauté the aromatics:
    • Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.
    • Stir in the minced garlic and cook for another 30 seconds until fragrant. Remove from heat.
  4. Mix the casserole ingredients:
    • In a large mixing bowl, combine the cooked chicken, cooked rice, broccoli, sautéed onions, garlic, cream of chicken soup, milk, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper.
    • Stir until everything is well coated and combined.
  5. Assemble the casserole:
    • Transfer the mixture to the prepared baking dish and spread it evenly.
    • Sprinkle the top with grated Parmesan cheese and breadcrumbs for a crispy topping (optional).
  6. Bake:
    • Bake uncovered in the preheated oven for 25–30 minutes, or until the cheese is melted, the casserole is bubbly, and the top is lightly golden.
