  • 1/2 cup salsa or Rotel tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack or mozzarella cheese

For the Roll-Ups:

  • 8 small flour tortillas (soft taco size)
  • 2 tbsp butter or oil (for brushing/baking or frying)

For Serving:

  • Sour cream
  • Salsa
  • Queso dip
  • Chopped cilantro or green onions (optional)

Instructions

Step 1: Cook the Beef Filling

  1. In a large skillet over medium heat, cook ground beef and diced onion until browned. Drain excess grease.
  2. Stir in garlic, taco seasoning, and salsa (or Rotel tomatoes).
  3. Simmer for 2-3 minutes, then remove from heat.
  4. Stir in shredded cheeses and mix well.

Step 2: Assemble the Roll-Ups

  1. Lay a flour tortilla on a flat surface.
  2. Spoon about 2-3 tablespoons of the beef mixture onto the lower third of the tortilla.
  3. Roll the tortilla tightly, folding in the sides as you go to create a burrito-style wrap.

Step 3: Cook the Roll-Ups

Oven-Baked Method (Healthier Option):

  1. Preheat oven to 400°F (200°C).
  2. Place roll-ups seam-side down on a baking sheet lined with parchment paper.
