Cheesy Beef Taco Pasta is a hearty, one-pot meal that combines seasoned ground beef, pasta, and plenty of melted cheese. It’s a kid-friendly, weeknight favorite that comes together in under 30 minutes.

- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- 2 cups beef broth
- 1 cup salsa
- 2 cups uncooked pasta (e.g., rotini or penne)
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- Chopped cilantro or green onions for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
- Add onion and garlic, cooking until softened, about 3–4 minutes.
- Stir in taco seasoning, beef broth, salsa, and uncooked pasta. Bring to a boil.
- Reduce heat to a simmer, cover, and cook for 12–15 minutes or until pasta is tender, stirring occasionally.
- Remove from heat and stir in cheddar cheese and sour cream until melted and creamy.
- Season with salt and pepper to taste. Garnish with cilantro or green onions if desired and serve hot.
Notes
- Use ground turkey or chicken for a lighter version.
- Add canned corn or black beans for extra flavor and texture.
- Leftovers reheat well and make a great lunch the next day.
