Description

Cheesy Beef Taco Pasta is a hearty, one-pot meal that combines seasoned ground beef, pasta, and plenty of melted cheese. It’s a kid-friendly, weeknight favorite that comes together in under 30 minutes.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 2 cups beef broth
  • 1 cup salsa
  • 2 cups uncooked pasta (e.g., rotini or penne)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped cilantro or green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  2. Add onion and garlic, cooking until softened, about 3–4 minutes.
  3. Stir in taco seasoning, beef broth, salsa, and uncooked pasta. Bring to a boil.
  4. Reduce heat to a simmer, cover, and cook for 12–15 minutes or until pasta is tender, stirring occasionally.
  5. Remove from heat and stir in cheddar cheese and sour cream until melted and creamy.
  6. Season with salt and pepper to taste. Garnish with cilantro or green onions if desired and serve hot.

Notes

  • Use ground turkey or chicken for a lighter version.
  • Add canned corn or black beans for extra flavor and texture.
  • Leftovers reheat well and make a great lunch the next day.
