Description

These Cheesy Beef Street Tacos are packed with bold flavors and melted cheese, wrapped in soft corn tortillas. Perfect for taco night, these tacos are easy to make and loaded with seasoned ground beef, gooey cheese, and fresh toppings.

For the Beef:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp taco seasoning (store-bought or homemade)
  • 1/2 tsp smoked paprika
  • 1/4 cup tomato sauce or salsa
  • Salt and black pepper, to taste

For the Tacos:

  • 8 small corn tortillas
  • 1 cup shredded Mexican cheese blend or cheddar cheese
  • 1 tbsp olive oil

Optional Toppings:

  • Diced tomatoes
  • Shredded lettuce
  • Diced onions
  • Chopped cilantro
  • Sliced jalapeños
  • Sour cream or Mexican crema
  • Lime wedges

Instructions

  1. Cook the Beef:
    • Heat a large skillet over medium heat. Add the ground beef and onion, breaking up the beef as it cooks.
    • Once the beef is browned and the onion is soft, drain excess grease if needed.
    • Stir in the garlic, taco seasoning, smoked paprika, and tomato sauce or salsa. Simmer for 3–5 minutes. Adjust seasoning with salt and pepper.
  2. Prepare the Tortillas:
    • Heat olive oil in a clean skillet over medium heat.
    • Place a tortilla in the skillet and sprinkle a layer of shredded cheese on one side. Add a spoonful of the cooked beef mixture on top of the cheese. Fold the tortilla in half and press gently.
  3. Cook the Tacos:
    • Cook the taco for 2–3 minutes on each side, or until the cheese is melted and the tortilla is crispy and golden. Repeat with the remaining tortillas and beef mixture.
  4. Serve:
    • Serve the cheesy beef tacos immediately, topped with your favorite toppings. Add a squeeze of lime juice for an extra burst of flavor.

Notes

  • Use flour tortillas if preferred, but corn tortillas are traditional for street tacos.
