  • 1/2 cup black beans (drained & rinsed, optional)
  • 1/2 cup corn kernels (fresh, frozen, or canned & drained)
  • 1/4 cup water

For the Wraps:

  • 4 large flour tortillas (burrito-size)
  • 1 1/2 cups shredded Mexican blend cheese
  • 1/4 cup sour cream (for spreading, optional)
  • 1/4 cup salsa or taco sauce (for extra flavor, optional)
  • 2 tbsp butter or oil (for crisping the wrap, optional)

For Topping (Optional):

  • Chopped fresh cilantro
  • Sliced jalapeños
  • Diced avocado
  • Extra sour cream & salsa

Instructions

Step 1: Cook the Beef Filling

  1. In a large skillet over medium heat, cook the ground beef and onion until browned. Drain excess grease.
  2. Stir in garlic, taco seasoning, diced tomatoes with green chilies, black beans (if using), corn, and water.
  3. Simmer for 3-5 minutes, until everything is heated through and thickened.

Step 2: Assemble the Wraps

  1. Lay out the flour tortillas on a flat surface.
  2. Spread a thin layer of sour cream or salsa over each tortilla (optional).
  3. Divide the beef mixture evenly among the tortillas.
  4. Sprinkle with shredded cheese and any additional toppings.
  5. Fold in the sides of each tortilla and roll tightly into a wrap.

Step 3: Toast the Wraps (Optional, for a Crispy Finish!)

  1. Heat butter or oil in a skillet over medium heat.
  2. Place each wrap seam-side down and cook for 1-2 minutes per side, until golden and crispy.

Step 4: Serve & Enjoy!

  • Slice in half and serve warm with extra salsa, sour cream, or guacamole on the side.

  • Low-Carb Option: Swap tortillas for lettuce wraps or low-carb tortillas.
