Ingredients

  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 (10 oz) can red enchilada sauce
  • 1 (14 oz) can diced tomatoes, drained
  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. In a large skillet over medium heat, add olive oil and sauté onion and garlic until softened, about 3 minutes.
  2. Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat if needed.
  3. Stir in enchilada sauce and diced tomatoes. Bring to a simmer.
  4. Add the cheese tortellini to the skillet and stir to coat evenly in the sauce.
  5. Cover and cook for 5-7 minutes, or until tortellini is heated through and tender.
  6. Sprinkle shredded cheddar and Monterey Jack cheese on top. Cover and cook for another 2-3 minutes, until cheese is melted.
  7. Garnish with chopped cilantro if desired and serve hot.
