- 1 lb ground beef
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 (10 oz) can red enchilada sauce
- 1 (14 oz) can diced tomatoes, drained
- 1 (20 oz) package refrigerated cheese tortellini
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped cilantro (optional)
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions
- In a large skillet over medium heat, add olive oil and sauté onion and garlic until softened, about 3 minutes.
- Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat if needed.
- Stir in enchilada sauce and diced tomatoes. Bring to a simmer.
- Add the cheese tortellini to the skillet and stir to coat evenly in the sauce.
- Cover and cook for 5-7 minutes, or until tortellini is heated through and tender.
- Sprinkle shredded cheddar and Monterey Jack cheese on top. Cover and cook for another 2-3 minutes, until cheese is melted.
- Garnish with chopped cilantro if desired and serve hot.
