Description

Cheesy Baked Irish Nachos are a hearty twist on traditional nachos, made with crispy sliced potatoes instead of chips, loaded with melted cheese, bacon, and green onions for a comforting and shareable appetizer.


Ingredients

  • 4 large russet potatoes, scrubbed and thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sliced green onions
  • 1/4 cup sour cream (for serving)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil.
  2. In a large bowl, toss potato slices with olive oil, salt, pepper, and garlic powder.
  3. Arrange the slices in a single layer on the prepared baking sheet.
  4. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  5. Remove from oven and arrange the potato slices slightly overlapping on an oven-safe platter or cast-iron skillet.
  6. Sprinkle with shredded cheese and bacon. Return to oven for 5–7 minutes, or until the cheese is melted and bubbly.
  7. Top with green onions, a dollop of sour cream, and parsley if desired.
  8. Serve immediately while hot.
