Description

A fun mash-up of cheeseburger cravings in quesadilla form—savory ground beef, melty cheese, pickles, and burger-style toppings wrapped in a crispy tortilla.


Ingredients

  • 1 tbsp vegetable oil
  • 1/2 lb (225 g) ground beef (80/20 blend)
  • 1/4 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and freshly ground black pepper, to taste
  • 2 large flour tortillas
  • 1 cup (100 g) shredded cheddar or American cheese
  • 2 tbsp diced dill pickles
  • 2 tbsp finely chopped onion
  • 1 tomato, thinly sliced
  • 23 tbsp burger sauce or mayonnaise with ketchup
  • Optional: lettuce, bacon bits

Instructions

  1. In a skillet over medium heat, warm oil. Add ground beef and season with garlic powder, onion powder, salt, and pepper.
  2. Cook, breaking up meat, until browned and cooked through, about 5–6 minutes. Drain excess fat.
  3. Remove from heat; stir in diced pickles and chopped onion.
  4. Heat a clean skillet or griddle over medium-low heat. Place one tortilla in skillet.
  5. Sprinkle half the cheese over tortilla, top with the beef mixture, tomato slices, and remaining cheese.
  6. Drizzle burger sauce over toppings, then place second tortilla on top.
  7. Cook 2–3 minutes per side, pressing gently, until golden and cheese melts. Flip carefully halfway through.
  8. Transfer to a cutting board; let rest 1 minute. Slice into wedges and serve with extra sauce, lettuce, or bacon bits.

Notes

  • Use warmed tortillas to help them crisp evenly.
  • Customize with your favorite cheeseburger toppings—bacon, jalapeños, or pickled jalapeños.
  • Press gently with a spatula while cooking for a flat, crisp quesadilla.
