Scale
- 1 tbsp vegetable oil
- 1/2 lb (225 g) ground beef (80/20 blend)
- 1/4 tsp garlic powder
- 1/2 tsp onion powder
- Salt and freshly ground black pepper, to taste
- 2 large flour tortillas
- 1 cup (100 g) shredded cheddar or American cheese
- 2 tbsp diced dill pickles
- 2 tbsp finely chopped onion
- 1 tomato, thinly sliced
- 2–3 tbsp burger sauce or mayonnaise with ketchup
- Optional: lettuce, bacon bits
Instructions
- In a skillet over medium heat, warm oil. Add ground beef and season with garlic powder, onion powder, salt, and pepper.
- Cook, breaking up meat, until browned and cooked through, about 5–6 minutes. Drain excess fat.
- Remove from heat; stir in diced pickles and chopped onion.
- Heat a clean skillet or griddle over medium-low heat. Place one tortilla in skillet.
- Sprinkle half the cheese over tortilla, top with the beef mixture, tomato slices, and remaining cheese.
- Drizzle burger sauce over toppings, then place second tortilla on top.
- Cook 2–3 minutes per side, pressing gently, until golden and cheese melts. Flip carefully halfway through.
- Transfer to a cutting board; let rest 1 minute. Slice into wedges and serve with extra sauce, lettuce, or bacon bits.
Notes
- Use warmed tortillas to help them crisp evenly.
- Customize with your favorite cheeseburger toppings—bacon, jalapeños, or pickled jalapeños.
- Press gently with a spatula while cooking for a flat, crisp quesadilla.
- Serve with fries or a side salad to complete the meal.
