Ingredients
For the Filling:
- 2 cups fresh spinach, chopped (or 1 cup frozen, thawed and squeezed dry)
- 1 tablespoon olive oil or butter
- 1 garlic clove, minced
- 1/2 cup ricotta cheese (or cream cheese for extra creaminess)
- 1/2 cup feta cheese, crumbled (or goat cheese)
- 1/4 cup mozzarella or parmesan, shredded
- 1 egg yolk (for richness, optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional, adds warmth)
For the Pastry:
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Sesame seeds or nigella seeds (optional, for garnish)
Instructions
Step 1: Prepare the Spinach Filling
- Heat olive oil in a pan over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Stir in spinach and cook until wilted (2 minutes). If using frozen spinach, ensure it’s fully thawed and drained.
- Transfer to a bowl and let cool slightly.
- Mix in ricotta, feta, mozzarella, egg yolk, salt, pepper, and nutmeg until well combined.
Step 2: Prepare the Pastry
- Preheat oven to 375°F (190°C).
- Roll out puff pastry on a floured surface and cut into 6-8 equal squares or rectangles.
- Place a spoonful of spinach filling in the center of each piece.
Step 3: Shape the Pastries (Choose Your Style!)
