Description

Cauliflower Pizza Crust is a healthy, low-carb alternative to traditional pizza dough, made with grated cauliflower, cheese, and eggs for a deliciously crisp and gluten-free base.


Ingredients

  • 1 medium head cauliflower (about 4 cups grated)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 large egg

Instructions

  1. Preheat oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Cut cauliflower into florets and pulse in a food processor until finely grated. You should get about 4 cups.
  3. Microwave the grated cauliflower for 4–5 minutes until softened. Let cool slightly, then place in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a bowl, combine cauliflower, Parmesan, mozzarella, oregano, garlic powder, salt, and egg. Mix until a dough forms.
  5. Transfer dough to prepared baking sheet and press into a thin, even 10–12 inch round crust.
  6. Bake for 20–25 minutes until golden and firm.
  7. Remove from oven, add your favorite pizza toppings, and bake an additional 10 minutes until cheese is melted and bubbly.

Notes

  • Be sure to squeeze out as much moisture as possible from the cauliflower for a crisp crust.
  • You can substitute Parmesan with nutritional yeast for a dairy-free version.
  • Crust can be made ahead and stored in the fridge for up to 3 days.
  • To make it vegan, use a flax egg and dairy-free cheese.
