Description

Cauliflower Fried Rice is a healthy, low-carb alternative to traditional fried rice, made with grated cauliflower, vegetables, and seasonings for a quick and tasty meal.


Ingredients

  • 1 medium head of cauliflower, grated (about 4 cups)
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup frozen peas and carrots, thawed
  • 2 eggs, beaten
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Grate the cauliflower using a box grater or food processor to make cauliflower rice.
  2. Heat sesame oil in a large skillet or wok over medium heat.
  3. Add garlic and onion; sauté for 2-3 minutes until fragrant and translucent.
  4. Add peas and carrots, and cook for another 2-3 minutes.
  5. Push vegetables to one side of the skillet and pour beaten eggs on the other side; scramble until cooked.
  6. Add the cauliflower rice and soy sauce to the skillet and stir to combine everything.
  7. Cook for 5-7 minutes, stirring occasionally, until cauliflower is tender.
  8. Season with salt and pepper, top with green onions, and serve warm.

Notes

  • Use tamari or coconut aminos for a gluten-free version.
  • Add cooked chicken, shrimp, or tofu for extra protein.
  • Make sure not to overcook the cauliflower to avoid sogginess.
