Description

Cauliflower Cheese is a classic British comfort food dish featuring tender cauliflower florets baked in a rich and creamy cheese sauce until golden and bubbly.


Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 teaspoon Dijon mustard
  • 1 1/2 cups grated cheddar cheese
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bring a large pot of salted water to a boil and cook the cauliflower florets for 5 minutes. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  4. Gradually whisk in the milk, stirring continuously until the sauce thickens.
  5. Add the Dijon mustard, nutmeg (if using), salt, and pepper. Stir in the cheddar cheese until melted and smooth.
  6. Place the cooked cauliflower in a baking dish and pour the cheese sauce over the top.
  7. Sprinkle with Parmesan cheese if using, and bake for 20-25 minutes until golden and bubbling.
  8. Serve hot as a side dish or main course.

Notes

  • For a crunchier top, sprinkle breadcrumbs mixed with a bit of melted butter over the cheese before baking.
  • Use a mix of cheeses like Gruyère or Red Leicester for added depth of flavor.
