- 1 large head of cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 teaspoon Dijon mustard
- 1 1/2 cups grated cheddar cheese

- 1/4 teaspoon ground nutmeg (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Bring a large pot of salted water to a boil and cook the cauliflower florets for 5 minutes. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
- Gradually whisk in the milk, stirring continuously until the sauce thickens.
- Add the Dijon mustard, nutmeg (if using), salt, and pepper. Stir in the cheddar cheese until melted and smooth.
- Place the cooked cauliflower in a baking dish and pour the cheese sauce over the top.
- Sprinkle with Parmesan cheese if using, and bake for 20-25 minutes until golden and bubbling.
- Serve hot as a side dish or main course.
Notes
- For a crunchier top, sprinkle breadcrumbs mixed with a bit of melted butter over the cheese before baking.
- Use a mix of cheeses like Gruyère or Red Leicester for added depth of flavor.
- Can be made ahead and reheated in the oven.
