Description

These carrot-shaped vegan Easter brownies are rich, fudgy, and super cute! Made with simple plant-based ingredients and topped with orange-tinted frosting and green candy stems, they’re a fun and delicious treat for kids and adults alike. Perfect for Easter baskets, parties, or a creative baking activity.


Ingredients

For the Vegan Brownies:

  • 1 cup all-purpose flour

  • 3/4 cup unsweetened cocoa powder

  • 1 cup organic cane sugar

  • 1/2 cup brown sugar

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup unsweetened applesauce

  • 1/2 cup melted coconut oil (or vegetable oil)

  • 1/4 cup plant-based milk (almond, soy, oat)

  • 1 tsp vanilla extract

For the Frosting:

  • 1/2 cup vegan butter, softened

  • 2 cups powdered sugar

  • 1-2 tbsp plant-based milk

  • 1 tsp vanilla extract

  • Orange food coloring (vegan-friendly)

For Decoration:

 

  • Green candy laces or green-tinted shredded coconut (for stems)

  • Optional: green icing or mint sprigs


Instructions

  • Make the brownies:
    Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper. In a large bowl, whisk together flour, cocoa powder, sugars, baking powder, and salt.

  • Add applesauce, melted coconut oil, plant milk, and vanilla. Stir until just combined. Do not overmix.

  • Pour the batter into the prepared pan and smooth the top. Bake for 28–32 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely.

  • Make the frosting:
    In a bowl, beat vegan butter until smooth. Gradually add powdered sugar, vanilla, and 1–2 tbsp plant milk until you reach a spreadable consistency. Mix in orange food coloring until you get a bright carrot shade.

  • Shape and decorate:
    Once brownies are cool, cut them into large triangles (like carrot shapes). Frost the top with orange frosting. Add green candy laces or other “stem” decorations to the wide end of each triangle to resemble carrot tops.

 

  • Chill for 10–15 minutes to help the frosting set, then serve and enjoy!


Notes

  • Make ahead and store in the fridge for up to 5 days.

  • Add chopped vegan chocolate or walnuts to the batter for extra texture.

  • Use a piping bag for cleaner frosting lines if decorating with detail.
