Description

  • 1 teaspoon baking powder

For the Apple Topping:
  • 2 medium apples, peeled and diced (Granny Smith or Honeycrisp)
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon cornstarch
  • 2 tablespoons water
For the Caramel Drizzle:

  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/4 teaspoon sea salt (optional, for salted caramel)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the cookie dough – In a bowl, cream butter, brown sugar, and granulated sugar until fluffy. Add eggs and vanilla, mixing until smooth.
  3. Mix dry ingredients – In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, and cinnamon. Gradually mix into wet ingredients until combined.
  4. Scoop & bake – Using a large cookie scoop, drop dough onto the baking sheet. Flatten slightly. Bake for 10-12 minutes until edges are golden. Let cool completely.
  5. Prepare the apple topping – In a saucepan, melt butter over medium heat. Add apples, brown sugar, and cinnamon. Cook for 5 minutes until soft. Stir in cornstarch and water, cooking for 2 more minutes until thickened. Let cool.
  6. Assemble the cookies – Spoon apple topping onto each cookie. Drizzle with warm caramel sauce.
  7. Serve & enjoy – Optional: Sprinkle with sea salt for extra flavor. Serve warm or at room temperature.
