Description

Caprese Tortellini Pasta Salad is a fresh and flavorful twist on a classic, featuring cheese tortellini tossed with cherry tomatoes, mozzarella balls, basil, and a balsamic glaze—perfect for picnics, potlucks, or light dinners.


Ingredients

  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup mini mozzarella balls (bocconcini), halved if large
  • 1/4 cup fresh basil leaves, torn or sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or balsamic glaze (plus more for drizzling)
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package directions. Drain and rinse with cold water to cool. Set aside.
  2. In a large bowl, combine cooked tortellini, cherry tomatoes, mozzarella, and basil.
  3. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste.
  4. Toss gently to combine and coat evenly.
  5. Chill for at least 30 minutes or serve immediately, drizzled with balsamic glaze if desired.
