- 1 1/2 cups cherry tomatoes, halved
- 1 cup mini mozzarella balls (bocconcini), halved if large
- 1/4 cup fresh basil leaves, torn or sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar or balsamic glaze (plus more for drizzling)
- Salt and pepper to taste
Instructions
- Cook tortellini according to package directions. Drain and rinse with cold water to cool. Set aside.
- In a large bowl, combine cooked tortellini, cherry tomatoes, mozzarella, and basil.
- Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste.
- Toss gently to combine and coat evenly.
- Chill for at least 30 minutes or serve immediately, drizzled with balsamic glaze if desired.
Notes
- Add grilled chicken for a heartier version.
- Substitute mozzarella balls with cubed fresh mozzarella if needed.
