Description

A fresh and vibrant Caprese pasta salad combining cherry tomatoes, mozzarella, and basil with pasta and a sweet balsamic glaze for a perfect summer side or light meal.


Ingredients

  • 12 oz rotini or penne pasta
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella balls (bocconcini), halved
  • 1/2 cup fresh basil leaves, chopped
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2 tbsp balsamic glaze (store-bought or homemade)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, and chopped basil.
  3. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  4. Transfer to a serving bowl or platter and drizzle with balsamic glaze just before serving.
  5. Serve chilled or at room temperature.

Notes

  • Use multicolored cherry tomatoes for a more vibrant presentation.
  • If fresh mozzarella balls aren’t available, cut a mozzarella block into small cubes.
  • Make your own balsamic glaze by simmering balsamic vinegar until thickened.
