Description
A fresh and vibrant Caprese pasta salad combining cherry tomatoes, mozzarella, and basil with pasta and a sweet balsamic glaze for a perfect summer side or light meal.

- 12 oz rotini or penne pasta
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella balls (bocconcini), halved
- 1/2 cup fresh basil leaves, chopped
- 2 tbsp olive oil
- Salt and pepper, to taste
- 2 tbsp balsamic glaze (store-bought or homemade)
Instructions
- Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, and chopped basil.
- Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
- Transfer to a serving bowl or platter and drizzle with balsamic glaze just before serving.
- Serve chilled or at room temperature.
Notes
- Use multicolored cherry tomatoes for a more vibrant presentation.
- If fresh mozzarella balls aren’t available, cut a mozzarella block into small cubes.
- Make your own balsamic glaze by simmering balsamic vinegar until thickened.
