- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp instant coffee granules
- 3/4 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a small bowl, dissolve the instant coffee granules in the milk.
- In another bowl, whisk together coffee milk mixture, oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir just until combined.
- Fold in the chocolate chips.
- Spoon batter into muffin cups, filling each about 3/4 full.
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use espresso powder for a bolder coffee flavor.
- Try white chocolate chips for a fun twist.
- Store in an airtight container for up to 3 days or freeze for longer storage.
