Description

Moist and fluffy muffins infused with cappuccino flavor and studded with chocolate chips—perfect for breakfast or a sweet coffee break treat.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp instant coffee granules
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a small bowl, dissolve the instant coffee granules in the milk.
  4. In another bowl, whisk together coffee milk mixture, oil, eggs, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir just until combined.
  6. Fold in the chocolate chips.
  7. Spoon batter into muffin cups, filling each about 3/4 full.
  8. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
