Campfire Nachos are a fun and easy outdoor meal loaded with cheesy, crunchy goodness and perfect for sharing around the fire.

- 1 bag (10 oz) tortilla chips
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup sliced black olives
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1 jalapeño, thinly sliced (optional)
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream (for serving)
- 1/2 cup guacamole (for serving)
Instructions
- Prepare a cast iron skillet or aluminum foil pan for cooking over the campfire.
- Layer half of the tortilla chips in the bottom of the pan.
- Sprinkle half of the cheeses, beans, olives, tomatoes, green onions, and jalapeños over the chips.
- Repeat with another layer of chips and the remaining toppings.
- Cover the pan with foil and place it over the campfire or on a grill grate over medium heat.
- Cook for 10–15 minutes, or until the cheese is melted and bubbly.
- Carefully remove from heat and uncover.
- Top with cilantro, and serve with sour cream and guacamole.
Notes
- Use a cast iron skillet for best heat distribution.
- Add cooked ground beef or shredded chicken for a protein boost.
- Customize toppings to your preference.
- Be cautious when removing the hot pan from the fire.
