Makes about 24 cookies
- 1 box (15.25 oz / 432 g) cake mix (any flavor, such as chocolate, lemon, or red velvet)
- 2 large eggs
- 1/3 cup (80 ml) vegetable oil
- 1 teaspoon vanilla extract (optional)
- 1/2 cup (60 g) powdered sugar
Instructions
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
- Make the cookie dough:
- In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and vanilla extract (if using). Mix until a soft, sticky dough forms.
- Prepare the powdered sugar:
- Place the powdered sugar in a shallow bowl.
- Form the cookies:
- Using a tablespoon or small cookie scoop, scoop out dough and roll it into 1-inch balls. Roll each ball generously in the powdered sugar, ensuring it’s fully coated.
- Bake the cookies:
- Place the coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are set and the cookies have crinkled tops.
- Cool and serve:
- Allow the cookies to cool on the baking sheets for 2-3 minutes before transferring them to a wire rack to cool completely.
