Description

A bold and hearty one-pan Cajun Sausage and Rice Skillet made with smoked sausage, rice, and colorful vegetables, all seasoned with Cajun spices for a quick and satisfying dinner.


Ingredients

  • 1 tablespoon olive oil
  • 14 oz smoked sausage, sliced
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced sausage and cook until browned, about 4-5 minutes. Remove and set aside.
  3. In the same skillet, add onions and bell peppers. Sauté until softened, about 4-5 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Stir in rice, chicken broth, diced tomatoes with juices, and Cajun seasoning. Bring to a boil.
  6. Reduce heat, cover, and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed.
  7. Return sausage to the skillet, stir to combine, and heat through for 2-3 minutes.
  8. Season with salt and pepper to taste. Garnish with green onions and serve.

  • Use brown rice for a whole grain option, increasing cook time as needed.
