A bold and hearty one-pan Cajun Sausage and Rice Skillet made with smoked sausage, rice, and colorful vegetables, all seasoned with Cajun spices for a quick and satisfying dinner.

- 1 tablespoon olive oil
- 14 oz smoked sausage, sliced
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 cup long grain white rice
- 2 cups chicken broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 tablespoon Cajun seasoning
- Salt and pepper, to taste
- 2 green onions, sliced (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced sausage and cook until browned, about 4-5 minutes. Remove and set aside.
- In the same skillet, add onions and bell peppers. Sauté until softened, about 4-5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in rice, chicken broth, diced tomatoes with juices, and Cajun seasoning. Bring to a boil.
- Reduce heat, cover, and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed.
- Return sausage to the skillet, stir to combine, and heat through for 2-3 minutes.
- Season with salt and pepper to taste. Garnish with green onions and serve.

- Adjust Cajun seasoning to your spice preference.
- Use brown rice for a whole grain option, increasing cook time as needed.
- Add shrimp or chicken for extra protein variety.
