Description

Ingredients

  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 2 tablespoons chopped green onions (for garnish)
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, celery, carrot, and bell pepper. Sauté until softened, about 5-7 minutes.
  3. Stir in the diced potatoes and cook for another 5 minutes.
  4. Add the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes, or until potatoes are tender.
  5. Use an immersion blender to partially blend the soup, leaving some chunks for texture.
  6. Stir in the heavy cream, Cajun seasoning, smoked paprika, cayenne pepper (if using), salt, and pepper.
  7. Simmer for another 5-10 minutes to allow flavors to meld.
  8. Serve hot, garnished with green onions and parsley.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or coconut milk.
  • Add cooked sausage or bacon for extra protein and flavor.
