- 1 cup heavy cream
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- 2 tablespoons chopped green onions (for garnish)
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, celery, carrot, and bell pepper. Sauté until softened, about 5-7 minutes.
- Stir in the diced potatoes and cook for another 5 minutes.
- Add the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes, or until potatoes are tender.
- Use an immersion blender to partially blend the soup, leaving some chunks for texture.
- Stir in the heavy cream, Cajun seasoning, smoked paprika, cayenne pepper (if using), salt, and pepper.
- Simmer for another 5-10 minutes to allow flavors to meld.
- Serve hot, garnished with green onions and parsley.
