Ingredients

Units Scale
  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Cajun seasoning, divided
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 12 small cooked shrimp, peeled and deveined
  • 1 teaspoon olive oil

Instructions

  1. Place eggs in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 10 minutes.
  2. Remove eggs, cool in ice water, peel, and slice in half lengthwise. Remove yolks and place in a bowl.
  3. Mash yolks with mayonnaise, Dijon mustard, 1/2 teaspoon Cajun seasoning, lemon juice, salt, and pepper until smooth.
  4. Spoon or pipe the yolk mixture back into the egg white halves.
  5. Toss shrimp in olive oil and remaining 1/2 teaspoon Cajun seasoning.
  6. Heat a skillet over medium heat and cook shrimp for 1–2 minutes per side, until heated through and lightly crisped.
  7. Top each deviled egg with a shrimp and garnish with parsley or green onions.
