Description
Cajun Blackened Chicken is a flavorful and spicy dish made with bold Cajun seasoning and seared in a hot skillet to create a smoky, blackened crust on tender, juicy chicken breasts.

- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil or melted butter
- 1 tbsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper (adjust to taste)
- 1/2 tsp black pepper
- 1/2 tsp salt
- Lemon wedges, for serving (optional)
Instructions
- In a small bowl, mix together the paprika, onion powder, garlic powder, thyme, oregano, cayenne pepper, black pepper, and salt to make the Cajun seasoning.
- Pat the chicken breasts dry with paper towels. Brush both sides with olive oil or melted butter.
- Generously coat both sides of the chicken breasts with the Cajun seasoning blend.
- Heat a cast-iron skillet over medium-high heat until very hot, about 5 minutes.
- Place the chicken breasts in the hot skillet and cook for 5–6 minutes per side, or until blackened and the internal temperature reaches 165°F (74°C).
- Remove from the skillet and let rest for 5 minutes before slicing.
- Serve with lemon wedges if desired.
Notes
- For extra flavor, marinate the chicken in the seasoning for 30 minutes before cooking.
- Can also be grilled instead of pan-seared.
- Serve with rice, salad, or roasted vegetables for a complete meal.
