- Crust:
- 11 oz butterscotch chips
- 1/2 cup unsalted butter
- 2 cups graham cracker crumbs
- Cheesecake Filling:
- 8 oz cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Prepare Crust: Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan. In a saucepan, melt butterscotch chips and butter over low heat, stirring frequently. Combine with graham cracker crumbs until fully coated.
- Layer Crust: Reserve about 2/3 cup of the crumb mixture and press the remaining mixture firmly into the bottom of the prepared pan.
- Make Filling: In a mixing bowl, beat softened cream cheese until fluffy. Add sweetened condensed milk, egg, and vanilla, and mix until smooth. Pour over the crust.
- Bake: Sprinkle the reserved crumb mixture over the top. Bake for about 25-30 minutes, or until the center is set. Allow the bars to cool, then refrigerate for at least 2 hours.

torage: Keep refrigerated in an airtight container for up to 5 days. Freezing is not recommended as it can affect the texture of the cream cheese filling
