- 1 bag (11 oz/310 g) butterscotch chips
- 1 cup (250 g) creamy peanut butter
- 4 cups (100 g) crispy rice cereal (like Rice Krispies)
- 1 cup (120 g) mini marshmallows (optional, for extra texture)
Instructions
1. Melt the butterscotch and peanut butter
- In a microwave-safe bowl, combine the butterscotch chips and peanut butter.
- Microwave in 30-second intervals, stirring after each, until the mixture is smooth and fully melted. (Alternatively, melt the mixture in a saucepan over low heat, stirring constantly.)
2. Mix in the cereal and marshmallows
- Pour the melted butterscotch mixture over the crispy rice cereal in a large mixing bowl.
- Stir gently to coat the cereal evenly. If using marshmallows, fold them in at this stage.
3. Shape the crunchies
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Shape into small clusters or cookies, pressing lightly with the back of the spoon if needed.
4. Chill and serve
- Refrigerate the clusters for at least 30 minutes or until firm.
- Once set, transfer to an airtight container for storage.

- Storage: Store in an airtight container at room temperature for up to 1 week, or in the refrigerator for 2 weeks.
