- 2 lobster tails (4–6 oz each)
- 1 cup unsalted butter (2 sticks)
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp white pepper (optional)
- Fresh herbs (such as thyme or parsley), for garnish
- Lemon wedges, for serving
Instructions
- Using kitchen shears, cut down the top of the lobster shell and gently pull the meat out to rest on top of the shell, keeping it attached at the base.
- In a saucepan over low heat, melt the butter slowly with the garlic, lemon juice, salt, and white pepper. Keep the heat low to avoid browning the butter.
- Once the butter is fully melted and warm (about 160–180°F), add the lobster tails, ensuring the meat is mostly submerged.
- Poach gently for 6–8 minutes, basting with butter, until the lobster is opaque and cooked through.
- Remove from butter, garnish with herbs and lemon wedges, and serve immediately.
Notes
- Use a thermometer to maintain the butter at poaching temperature without letting it boil.
- Clarified butter can be used for an even silkier texture and better heat control.
- Serve with mashed potatoes, risotto, or pasta for a full meal.
