- 1 lb breakfast sausage
- 6 large eggs
- 1/4 cup milk
- 2 cups frozen hash browns, thawed
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup chopped bell pepper (optional)
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Non-stick cooking spray
Instructions
- Preheat oven to 375°F (190°C). Grease a Bundt pan thoroughly with non-stick cooking spray.
- In a skillet, cook sausage over medium heat until browned and fully cooked. Drain excess grease and set aside.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Add hash browns, cooked sausage, cheese, bell pepper, and green onions to the bowl. Mix until well combined.
- Pour the mixture evenly into the prepared Bundt pan and gently press down to compact.
- Bake for 40–45 minutes or until the center is set and the top is golden brown.
- Allow to cool for 10 minutes, then invert onto a serving plate.
- Slice and serve warm. Optionally, serve with salsa or hot sauce.
Notes
- You can make this ahead and reheat slices in the microwave or oven.
