Description

This Bundt Cake Breakfast is a savory and hearty make-ahead meal featuring layers of eggs, sausage, cheese, and hash browns baked in a Bundt pan — perfect for brunch or feeding a crowd.


Ingredients

  • 1 lb breakfast sausage
  • 6 large eggs
  • 1/4 cup milk
  • 2 cups frozen hash browns, thawed
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup chopped bell pepper (optional)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 375°F (190°C). Grease a Bundt pan thoroughly with non-stick cooking spray.
  2. In a skillet, cook sausage over medium heat until browned and fully cooked. Drain excess grease and set aside.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Add hash browns, cooked sausage, cheese, bell pepper, and green onions to the bowl. Mix until well combined.
  5. Pour the mixture evenly into the prepared Bundt pan and gently press down to compact.
  6. Bake for 40–45 minutes or until the center is set and the top is golden brown.
  7. Allow to cool for 10 minutes, then invert onto a serving plate.
  8. Slice and serve warm. Optionally, serve with salsa or hot sauce.
