Description

A crispy and spicy appetizer combining the bold flavor of buffalo chicken with the satisfying crunch of egg rolls. Perfect for game day or parties.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo wing sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 1/4 cup finely chopped green onions
  • 12 egg roll wrappers
  • 1 egg, beaten (for sealing)
  • Oil for frying

Instructions

  1. In a large bowl, mix together shredded chicken, buffalo wing sauce, mozzarella cheese, blue cheese (if using), and green onions until well combined.
  2. Lay out an egg roll wrapper with one corner pointing toward you. Place about 2 tablespoons of filling in the center.
  3. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Brush the top corner with beaten egg to seal. Repeat with remaining wrappers and filling.
  4. Heat oil in a deep fryer or large skillet to 350°F (175°C).
  5. Fry egg rolls in batches until golden brown and crispy, about 3–4 minutes per batch. Drain on paper towels.
  6. Serve hot with ranch or blue cheese dressing for dipping.

Notes

  • For a healthier option, bake the egg rolls at 400°F for 15–20 minutes, flipping halfway through.
  • Use rotisserie chicken for quick prep.
  • Can be made ahead and frozen before frying or baking.
