Scale
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 1/2 cups vegetable broth
- 16 ounces potato gnocchi
- 1/2 cup sun-dried tomatoes (drained and chopped)
- 1/8 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup grated Parmesan cheese
- 2/3 cup heavy cream
- 2 cups baby spinach, roughly chopped
- 5–6 fresh basil leaves, chiffonaded (plus more for garnish)
Instructions
- In a large skillet over medium heat, warm the olive oil. Add the minced garlic and Italian seasoning, sautéing for about 1 minute until fragrant.
- Pour in the vegetable broth, then add the gnocchi, chopped sun-dried tomatoes, crushed red pepper flakes, salt, and black pepper. Stir to combine.
- Bring the mixture to a gentle simmer. Cover and cook for 5–6 minutes, or until the gnocchi are tender and cooked through.
- Uncover the skillet and stir in the heavy cream and grated Parmesan cheese. Cook for an additional 2–3 minutes, allowing the sauce to thicken slightly.
- Add the chopped baby spinach and basil to the skillet, stirring until the spinach has wilted and the basil is incorporated.
- Remove from heat. Serve the gnocchi hot, garnished with additional basil and Parmesan cheese if desired.
Notes
- For a protein boost, consider adding cooked chicken, shrimp, or Italian sausage.
- To make this dish vegan, substitute the heavy cream with full-fat coconut milk and use vegan Parmesan cheese.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of broth or cream if needed.
