Description

Buckeye Pie is a rich, no-bake dessert inspired by the classic Buckeye candy. With a creamy peanut butter filling, chocolate ganache topping, and an Oreo crust, it’s a decadent treat for peanut butter and chocolate lovers.


Ingredients

  • 24 Oreo cookies, crushed
  • 5 tbsp unsalted butter, melted
  • 1 cup creamy peanut butter
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 8 oz whipped topping (like Cool Whip)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. In a bowl, mix crushed Oreos with melted butter until well combined. Press into the bottom and up the sides of a 9-inch pie dish. Chill in refrigerator while preparing filling.
  2. In a large bowl, beat peanut butter, cream cheese, and powdered sugar until smooth.
  3. Fold in whipped topping until fully combined. Spread the peanut butter filling into the chilled crust.
  4. In a small saucepan, heat heavy cream until just beginning to simmer. Pour over chocolate chips and let sit for 1 minute. Stir until smooth to make ganache.
  5. Pour chocolate ganache over peanut butter layer and spread evenly.
  6. Refrigerate for at least 4 hours or until set before slicing and serving.

Notes

  • Use a food processor to easily crush Oreo cookies.
  • For a firmer pie, freeze for 30 minutes before serving.
  • Top with chopped peanuts or mini chocolate chips for extra crunch.
