- 12 oz bowtie or rotini pasta
- 2 cups cherry tomatoes, halved
- 1/2 cup fresh basil leaves, chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1/2 cup shredded Parmesan cheese
- Salt and black pepper to taste
- Optional: 1/4 tsp red pepper flakes for a bit of heat
Instructions
- Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool completely.
- In a large bowl, combine cherry tomatoes, basil, and garlic.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, pepper, and red pepper flakes if using.
- Add cooled pasta to the tomato mixture and pour the dressing over it.
- Toss everything gently until well coated.
- Sprinkle with Parmesan cheese and toss lightly again.
- Chill for at least 30 minutes before serving for best flavor.
Notes
- Use ripe, sweet tomatoes for the best bruschetta flavor.
- Add diced mozzarella for a Caprese-style twist.
- Can be made a few hours ahead and refrigerated until ready to serve.
