Description

Bruschetta Pasta Salad is a fresh and vibrant dish combining juicy tomatoes, fragrant basil, garlic, and tender pasta, tossed in a light dressing for a perfect summer side or light meal.


Ingredients

  • 12 oz bowtie or rotini pasta
  • 2 cups cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1/2 cup shredded Parmesan cheese
  • Salt and black pepper to taste
  • Optional: 1/4 tsp red pepper flakes for a bit of heat

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool completely.
  2. In a large bowl, combine cherry tomatoes, basil, and garlic.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, pepper, and red pepper flakes if using.
  4. Add cooled pasta to the tomato mixture and pour the dressing over it.
  5. Toss everything gently until well coated.
  6. Sprinkle with Parmesan cheese and toss lightly again.
  7. Chill for at least 30 minutes before serving for best flavor.

Notes

  • Use ripe, sweet tomatoes for the best bruschetta flavor.
  • Add diced mozzarella for a Caprese-style twist.
  • Can be made a few hours ahead and refrigerated until ready to serve.
