- 1 box brownie mix (plus ingredients called for on box: eggs, oil, water)
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 8 oz semi-sweet chocolate, melted and slightly cooled
- 1/2 cup heavy cream
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Prepare the brownie batter according to the package instructions. Pour into the prepared pan and bake for about 20 minutes, until just set but not overbaked. Let cool slightly.
- In a large bowl, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Fold in melted chocolate and heavy cream until smooth and combined.
- Pour the cheesecake batter over the partially baked brownie base. Smooth the top.
- Bake for 40-45 minutes, or until the center is set and only slightly jiggles. Let cool completely at room temperature, then chill in the refrigerator for at least 4 hours or overnight.
- Run a knife around the edge before removing the springform pan. Slice and serve chilled.
