For the Cookies:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 Brown Sugar Cinnamon Pop-Tarts, crushed into small pieces

For the Cinnamon Glaze:

  • 1/2 cup (60g) powdered sugar
  • 1 tbsp milk
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract

Instructions

1. Make the Cookie Dough

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in egg and vanilla extract until combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in the crushed Pop-Tarts, ensuring even distribution.

2. Chill & Bake

  1. (Optional) Chill dough for 30 minutes for thicker cookies.
  2. Scoop tablespoon-sized balls onto the baking sheet, spacing them 2 inches apart.
  3. Bake for 10-12 minutes, until edges are lightly golden.
  4. Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.

3. Make the Glaze & Drizzle

  1. In a small bowl, whisk together powdered sugar, milk, cinnamon, and vanilla until smooth.
  2. Drizzle over cooled cookies using a spoon or piping bag.
