For the Cookies:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar
- 1/4 cup (50g) granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 Brown Sugar Cinnamon Pop-Tarts, crushed into small pieces
For the Cinnamon Glaze:
- 1/2 cup (60g) powdered sugar
- 1 tbsp milk
- 1/2 tsp cinnamon
- 1/4 tsp vanilla extract
Instructions
1. Make the Cookie Dough
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in egg and vanilla extract until combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in the crushed Pop-Tarts, ensuring even distribution.
2. Chill & Bake
- (Optional) Chill dough for 30 minutes for thicker cookies.
- Scoop tablespoon-sized balls onto the baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, until edges are lightly golden.
- Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.
3. Make the Glaze & Drizzle
- In a small bowl, whisk together powdered sugar, milk, cinnamon, and vanilla until smooth.
- Drizzle over cooled cookies using a spoon or piping bag.
4. Serve & Enjoy

Notes
- Want extra crunch? Add ½ cup white chocolate chips.
