- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 1/4 cups brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- Optional: extra brown sugar for rolling
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together peanut butter, softened butter, and brown sugar until light and fluffy.
- Beat in egg and vanilla until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients until a soft dough forms.
- Scoop dough into tablespoon-sized balls. Roll in extra brown sugar if desired, and place on baking sheet about 2 inches apart.
- Flatten slightly with a fork in a criss-cross pattern.
- Bake for 8–10 minutes or until edges are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Use natural peanut butter for a more rustic texture or classic brands for smoother cookies.
- Add chocolate chips or chopped peanuts for extra texture.
- Cookies will be soft out of the oven and firm up as they cool.
