Description

This Brown Sugar Layer Cake is rich, moist, and packed with caramel-like flavor from brown sugar. Paired with a sweet peach filling and a buttery cream cheese frosting, it’s the perfect dessert for any special occasion!


Ingredients

For the Brown Sugar Cake:

  • 3 cups (375 g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (225 g) unsalted butter, softened
  • 1 3/4 cups (350 g) light brown sugar, packed
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup (240 ml) buttermilk
  • 1/2 cup (120 ml) sour cream

For the Peach Filling:

  • 2 cups fresh or frozen peaches, diced
  • 1/3 cup (65 g) granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water

For the Cream Cheese Frosting:

  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (115 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar
  • 1 teaspoon vanilla extract

For Garnish (Optional):

  • Fresh peach slices
  • Caramel drizzle
  • Toasted pecans

Instructions

1️⃣ Make the Cake Layers

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and brown sugar until fluffy (2 minutes).
  4. Add eggs one at a time, mixing well. Stir in vanilla extract.
  5. Alternate adding flour mixture and buttermilk + sour cream, mixing until combined.
  6. Divide batter between pans and bake for 25-30 minutes, until a toothpick comes out clean.
  7. Cool cakes completely before assembling.

2️⃣ Make the Peach Filling

  1. In a saucepan, combine peaches, sugar, and lemon juice over medium heat.
  2. Cook for 5 minutes, stirring occasionally.
  3. Stir in cornstarch mixture and cook until thickened (2 more minutes).
  4. Let cool completely before using.

3️⃣ Make the Cream Cheese Frosting

  1. Beat cream cheese and butter until smooth.
  2. Gradually add powdered sugar, beating until fluffy.
  3. Mix in vanilla extract.

4️⃣ Assemble the Cake

  1. Place one cake layer on a serving plate. Spread with peach filling.
  2. Repeat with the second layer, then top with the third cake layer.
  3. Frost the top and sides with cream cheese frosting.

5️⃣ Garnish & Serve

  • Decorate with fresh peach slices, caramel drizzle, or toasted pecans.
  • Chill for 30 minutes before slicing for cleaner cuts.
