These brown sugar cookies are soft, chewy, and packed with warm caramel-like flavor from the brown sugar. They’re simple to make and come out perfect every time—no chilling required! Great for any time of year, especially the holidays.
Ingredients

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, melted

1 1/4 cups packed light brown sugar

1 large egg

1 large egg yolk
-
1 tablespoon vanilla extract
Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large bowl, mix the melted butter and brown sugar until smooth and creamy.

Add in the egg, egg yolk, and vanilla extract. Mix until fully combined.

Slowly stir in the dry ingredients until a soft dough forms.

Scoop dough into 1.5 tablespoon-sized balls and place them on the prepared baking sheet, leaving space between each.

Bake for 9–11 minutes, or until the edges are lightly golden and the centers look slightly underbaked.

Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes

For a deeper flavor, try using dark brown sugar instead of light.

Don’t overbake—cookies will continue to set as they cool.

Optional: Add a sprinkle of flaky sea salt on top before baking for a sweet-salty twist.
