- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 3/4 cup packed light brown sugar
- 2 large ripe bananas, mashed
- 1/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together melted butter and brown sugar until smooth. Add mashed bananas, milk, egg, and vanilla; mix until combined.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.
- Divide batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use very ripe bananas for maximum sweetness and flavor.
- Add chopped walnuts or chocolate chips for extra texture.
- Store muffins in an airtight container for up to 3 days or freeze for longer storage.
