Description

Moist and flavorful Brown Sugar Banana Muffins made with ripe bananas and rich brown sugar for a sweet, bakery-style treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 2 large ripe bananas, mashed
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together melted butter and brown sugar until smooth. Add mashed bananas, milk, egg, and vanilla; mix until combined.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.
  5. Divide batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
