Quick and easy breakfast quesadillas filled with scrambled eggs, cheese, and your choice of veggies or breakfast meats.

- 4 large flour tortillas (8-inch)
- 6 large eggs
- 1/2 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup cooked breakfast sausage or bacon, crumbled (optional)
- 2 tbsp butter or oil
- Salt and pepper, to taste
- Sour cream and salsa, for serving
Instructions
- In a bowl, whisk eggs with salt and pepper.
- Heat 1 tbsp butter in a skillet over medium heat. Add bell peppers and onions; sauté until softened, about 3-4 minutes.
- Add eggs and scramble until just set. Remove from heat.
- Heat another skillet or clean the same one and warm over medium heat.
- Place one tortilla in the skillet, sprinkle half the cheese over half the tortilla, add scrambled eggs, and cooked sausage/bacon if using.
- Sprinkle remaining cheese on top and fold tortilla over to cover filling.
- Cook 2-3 minutes per side until golden brown and cheese is melted.
- Repeat with remaining tortillas and filling.
- Slice into wedges and serve with sour cream and salsa.

- Customize with your favorite veggies like spinach, mushrooms, or tomatoes.
- Use whole wheat tortillas for a healthier option.
- For a vegetarian version, omit the meat and add extra veggies or beans.
- Leftovers can be reheated in a skillet or microwave.
