- 4 slices of bread (sourdough, whole wheat, or your favorite)
- 4 slices of cheese (cheddar, American, or Swiss)
- 4 strips of bacon, cooked crispy
- 2 large eggs
- 2 tbsp milk
- 1 tbsp butter, divided
- Salt and pepper, to taste
- 1 tbsp mayonnaise (optional, for spreading on the bread)
Instructions

Cook the bacon:
- In a skillet over medium heat, cook bacon until crispy. Drain on paper towels and set aside.

Scramble the eggs:
- In a small bowl, whisk together eggs, milk, salt, and pepper.
- Heat 1/2 tablespoon of butter in a nonstick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are soft and fluffy. Remove from heat.

Assemble the sandwich:
- Spread mayonnaise (if using) or butter on one side of each slice of bread.
- Place one slice of bread buttered-side down in a skillet or griddle.
- Layer with 1 slice of cheese, scrambled eggs, bacon, and a second slice of cheese. Top with another slice of bread, buttered-side up.

Cook the sandwich:
- Heat the skillet or griddle over medium heat. Cook the sandwich for 3–4 minutes on one side, pressing gently with a spatula. Flip and cook for another 3–4 minutes, or until the bread is golden brown and the cheese is melted.

- Slice the grilled cheese in half and serve warm. Pair with fresh fruit, hash browns, or a side of coffee for a complete breakfast!
