Description

 

A delicious twist on a classic favorite, this breakfast grilled cheese features gooey melted cheese, crispy bacon, fluffy scrambled eggs, and buttery toast. It’s a quick and satisfying way to start your day!


Ingredients

  • 4 slices of bread (sourdough, whole wheat, or your favorite)
  • 4 slices of cheese (cheddar, American, or Swiss)
  • 4 strips of bacon, cooked crispy
  • 2 large eggs
  • 2 tbsp milk
  • 1 tbsp butter, divided
  • Salt and pepper, to taste
  • 1 tbsp mayonnaise (optional, for spreading on the bread)

Instructions

  1. Cook the bacon:

    • In a skillet over medium heat, cook bacon until crispy. Drain on paper towels and set aside.
  2. Scramble the eggs:

    • In a small bowl, whisk together eggs, milk, salt, and pepper.
    • Heat 1/2 tablespoon of butter in a nonstick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are soft and fluffy. Remove from heat.
  3. Assemble the sandwich:

    • Spread mayonnaise (if using) or butter on one side of each slice of bread.
    • Place one slice of bread buttered-side down in a skillet or griddle.
    • Layer with 1 slice of cheese, scrambled eggs, bacon, and a second slice of cheese. Top with another slice of bread, buttered-side up.
  4. Cook the sandwich:

    • Heat the skillet or griddle over medium heat. Cook the sandwich for 3–4 minutes on one side, pressing gently with a spatula. Flip and cook for another 3–4 minutes, or until the bread is golden brown and the cheese is melted.
  5. Serve:

    • Slice the grilled cheese in half and serve warm. Pair with fresh fruit, hash browns, or a side of coffee for a complete breakfast!

 


Notes

  • For extra flavor, add sliced avocado, tomato, or sautéed spinach to the sandwich.
  • Swap the bacon for cooked sausage patties, ham, or a vegetarian alternative.
  • For a crispy exterior, use mayonnaise instead of butter when spreading the bread.
