Ingredients
For the Chicken:

- 1 cup (120 g) all-purpose flour
- 1 cup (120 g) buttermilk (or regular milk + 1 tsp vinegar)
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon baking powder
- 2 cups (500 ml) vegetable oil (for frying)
For the Sauce (Choose One or Mix & Match!)
🔥 Buffalo Sauce:
- 1/2 cup (120 ml) hot sauce (Frank’s RedHot or similar)
- 1/4 cup (60 g) melted butter
- 1 teaspoon honey (optional)
🍯 Honey BBQ Sauce:
- 1/2 cup (120 ml) BBQ sauce
- 2 tablespoons honey
- 1 teaspoon Worcestershire sauce
🍯🔥 Honey Garlic Sauce:
- 1/4 cup (60 ml) honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon butter
Instructions
1️⃣ Prepare the chicken:
- In a bowl, mix buttermilk and egg. Add the chicken pieces and let them soak for 15-30 minutes (this makes them extra tender).
2️⃣ Prepare the breading:
- In another bowl, combine flour, salt, pepper, garlic powder, paprika, and baking powder.
3️⃣ Coat the chicken:
- Remove the chicken from the buttermilk, letting excess drip off.
- Coat each piece in the seasoned flour. Press gently to make sure the coating sticks.
4️⃣ Fry the chicken:
- Heat the oil in a deep pan to 350°F (175°C).
- Fry the chicken in batches for 4-5 minutes until golden brown and crispy.
- Transfer to a paper towel-lined plate to remove excess oil.
5️⃣ Make the sauce:
- While the chicken is frying, heat your chosen sauce ingredients in a small saucepan over low heat for 2-3 minutes, stirring until combined.
6️⃣ Toss & Serve:
- Toss the crispy chicken bites in the warm sauce until evenly coated.
- Serve hot with ranch or blue cheese dressing and celery sticks.
Notes
📌 Extra Crispy? Double-dip the chicken: after the first flour coating, dip it back into buttermilk and then coat in flour again.
🌶 Spicier? Add cayenne pepper to the flour mixture or extra hot sauce to the Buffalo sauce.
🍗 Air Fryer Option: Cook at 400°F (200°C) for 12-15 minutes, shaking halfway through.
🧄 Garlic Lovers: Add roasted garlic or garlic powder to the sauce.
