Ingredients

Units Scale

For the Chicken:

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup (120 g) all-purpose flour
  • 1 cup (120 g) buttermilk (or regular milk + 1 tsp vinegar)
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon baking powder
  • 2 cups (500 ml) vegetable oil (for frying)

For the Sauce (Choose One or Mix & Match!)

🔥 Buffalo Sauce:

  • 1/2 cup (120 ml) hot sauce (Frank’s RedHot or similar)
  • 1/4 cup (60 g) melted butter
  • 1 teaspoon honey (optional)

🍯 Honey BBQ Sauce:

  • 1/2 cup (120 ml) BBQ sauce
  • 2 tablespoons honey
  • 1 teaspoon Worcestershire sauce

🍯🔥 Honey Garlic Sauce:

  • 1/4 cup (60 ml) honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon butter

Instructions

1️⃣ Prepare the chicken:

  • In a bowl, mix buttermilk and egg. Add the chicken pieces and let them soak for 15-30 minutes (this makes them extra tender).

2️⃣ Prepare the breading:

  • In another bowl, combine flour, salt, pepper, garlic powder, paprika, and baking powder.

3️⃣ Coat the chicken:

  • Remove the chicken from the buttermilk, letting excess drip off.
  • Coat each piece in the seasoned flour. Press gently to make sure the coating sticks.

4️⃣ Fry the chicken:

  • Heat the oil in a deep pan to 350°F (175°C).
  • Fry the chicken in batches for 4-5 minutes until golden brown and crispy.
  • Transfer to a paper towel-lined plate to remove excess oil.

5️⃣ Make the sauce:

  • While the chicken is frying, heat your chosen sauce ingredients in a small saucepan over low heat for 2-3 minutes, stirring until combined.

6️⃣ Toss & Serve:

  • Toss the crispy chicken bites in the warm sauce until evenly coated.
  • Serve hot with ranch or blue cheese dressing and celery sticks.

Notes

📌 Extra Crispy? Double-dip the chicken: after the first flour coating, dip it back into buttermilk and then coat in flour again.
🌶 Spicier? Add cayenne pepper to the flour mixture or extra hot sauce to the Buffalo sauce.
🍗 Air Fryer Option: Cook at 400°F (200°C) for 12-15 minutes, shaking halfway through.
🧄 Garlic Lovers: Add roasted garlic or garlic powder to the sauce.
