- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 cup milk
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- 2 cups fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar (for cream cheese filling)
- 1 large egg (for cream cheese filling)
- 1/2 cup all-purpose flour (for crumb topping)
- 1/4 cup granulated sugar (for crumb topping)
- 1/4 cup unsalted butter, cold and cubed (for crumb topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Add dry ingredients alternately with milk to the creamed mixture, mixing just until combined.
- Spread half of the batter into the prepared baking dish. Sprinkle blueberries evenly over the batter.
- In a medium bowl, beat cream cheese, 1/4 cup sugar, and 1 egg until smooth. Spread over blueberries.
- Drop remaining batter by spoonfuls over the cream cheese layer and gently spread.
- For the crumb topping, combine flour and sugar in a small bowl. Cut in cold butter until mixture resembles coarse crumbs. Sprinkle over the cake.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before serving. Enjoy warm or at room temperature.
Notes
- You can use frozen blueberries; do not thaw before adding.
- Store leftovers in the refrigerator for up to 3 days.
- Excellent served with a dusting of powdered sugar.
