These Blueberry Cookies are soft, chewy, and bursting with juicy blueberries! - 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar (for extra chewiness!)
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp lemon zest (optional, enhances the blueberry flavor!)
- 3/4 cup fresh blueberries (or 1/2 cup dried blueberries for a chewier cookie!)
- 1/2 cup white chocolate chips (optional, for a sweet contrast!)
Instructions
Step 1: Prepare the Dough
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
- Mix in egg, vanilla extract, and lemon zest (if using) until combined.
Step 2: Fold in Blueberries
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the blueberries and white chocolate chips (if using). (Be careful not to overmix if using fresh blueberries to avoid breaking them!)
Step 3: Bake the Cookies
- Scoop about 1 ½ tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are slightly golden.
- Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
