Description

These Blueberry Cookies are soft, chewy, and bursting with juicy blueberries! Made with butter, vanilla, and fresh or dried blueberries, these cookies are sweet, fruity, and perfect for a unique dessert or snack.   • 1/2 tsp baking powder

  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar (for extra chewiness!)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest (optional, enhances the blueberry flavor!)
  • 3/4 cup fresh blueberries (or 1/2 cup dried blueberries for a chewier cookie!)
  • 1/2 cup white chocolate chips (optional, for a sweet contrast!)

Instructions

Step 1: Prepare the Dough

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  4. Mix in egg, vanilla extract, and lemon zest (if using) until combined.

Step 2: Fold in Blueberries

  1. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  2. Gently fold in the blueberries and white chocolate chips (if using). (Be careful not to overmix if using fresh blueberries to avoid breaking them!)

Step 3: Bake the Cookies

  1. Scoop about 1 ½ tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are slightly golden.
  3. Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
