Description

This BLT Pasta Salad takes the classic flavors of a bacon, lettuce, and tomato sandwich and turns them into a cool, creamy, crowd-pleasing side dish. Perfect for potlucks, picnics, or a quick summer lunch, it combines crispy bacon, juicy tomatoes, and fresh lettuce with tender pasta and a tangy dressing.


Ingredients

  • 12 oz rotini or bowtie pasta

  • 1 lb bacon, cooked and crumbled

  • 2 cups cherry tomatoes, halved

  • 2 cups chopped romaine or iceberg lettuce

  • 1/2 cup diced red onion (optional)

  • 1 cup mayonnaise

  • 1/2 cup sour cream or Greek yogurt

  • 2 tablespoons white vinegar or lemon juice

  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper


Instructions

  1. Cook the pasta according to package directions. Drain and rinse under cold water to cool. Set aside.

  2. In a small bowl, whisk together mayonnaise, sour cream, vinegar, garlic powder, salt, and pepper to make the dressing.

  3. In a large bowl, combine the cooled pasta, bacon, cherry tomatoes, lettuce, and red onion.

  4. Pour the dressing over the salad and toss gently to coat.

  5. Chill for at least 30 minutes before serving. Toss again and serve cold.


Notes

  • Add the lettuce just before serving to keep it crisp.

  • You can substitute turkey bacon or use a lighter dressing if preferred.

  • Add avocado or shredded cheddar for extra flavor.
