For the Quesadilla Filling:
- 1 lb ground beef (or shredded chicken)
- 1/2 cup onion (diced)
- 2 cloves garlic (minced)
- 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
- 1/3 cup water
- 1/2 cup salsa
- 1 1/2 cups shredded Mexican blend cheese
For the Quesadilla Ring:
- 10–12 small flour tortillas (fajita-size)
- 2 tbsp melted butter (for brushing)
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika (optional, for extra flavor)
For Dipping:
- Sour cream
- Salsa
- Guacamole
Instructions
Step 1: Prepare the Filling
- In a large skillet over medium heat, cook the ground beef and onions until browned.
- Drain excess grease, then stir in garlic, taco seasoning, water, and salsa. Simmer for 2-3 minutes until thickened.
- Remove from heat and stir in 1 cup of shredded cheese.
Step 2: Assemble the Quesadilla Ring
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Cut tortillas in half and place a tablespoon of filling on the cut edge of each half.
- Sprinkle with extra cheese, then roll each tortilla half into a cone shape, sealing the edges.
- Arrange the filled cones in a circle, slightly overlapping, around a small bowl (to keep space for dipping).
Step 3: Bake & Serve
- Brush the tops of the tortillas with melted butter and sprinkle with garlic powder and smoked paprika.
- Bake for 15-20 minutes, until golden and crispy.
- Remove the bowl, fill the center with salsa, guacamole, or sour cream, and serve warm!
