- 4 cups cooked and cooled white rice
- 2 tablespoons vegetable oil
- 2 large eggs, beaten
- 1 cup diced carrots
- 1 cup frozen peas
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish
- Optional protein: 1 pound diced chicken, shrimp, or beef
Instructions
- Preheat Blackstone griddle to medium-high heat.
- Drizzle vegetable oil onto the griddle and cook diced carrots, peas, and onion until softened, about 3-4 minutes.
- Push the veggies to one side and pour the beaten eggs onto the other side. Scramble the eggs until cooked through, then mix with the veggies.
- Add cooked rice to the griddle, breaking up any clumps, and stir-fry with the vegetables and eggs.
- Add soy sauce, oyster sauce (if using), and sesame oil. Mix everything together thoroughly.
- If using a protein, cook it separately on the griddle, season with salt and pepper, then mix into the rice once fully cooked.
- Stir-fry everything for another 2-3 minutes until heated through and slightly crispy.
- Garnish with chopped green onions and serve hot.
Notes
- Use day-old rice for the best texture and less stickiness.
- Customize by adding other vegetables like bell peppers or broccoli.
