1.5 lbs boneless skinless chicken breasts, diced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas

1 medium carrot, julienned

1 small onion, sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon hoisin sauce

1 teaspoon sesame oil (for flavor)

Instructions

Preheat your Blackstone griddle to medium-high heat.

Drizzle olive oil over the hot griddle. Add diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.

Push the chicken to one side of the griddle. On the other side, add a bit more oil if needed and toss on the veggies: broccoli, bell peppers, snap peas, carrots, onion, and garlic. Stir fry for 4-5 minutes until crisp-tender.

Mix the chicken and veggies together on the griddle.

In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, and sesame oil. Pour the sauce over the stir fry and toss everything to coat evenly.
