- 1 (15 oz) can black beans, drained and rinsed
- 1 tsp ground cumin
- 1/2 tsp chili powder

- 1/2 tsp salt (or to taste)
- 1/4 cup water or vegetable broth
- 8 small corn or flour tortillas
- 1 cup shredded cheddar or Monterey Jack cheese

Instructions
- Prepare the Black Bean Filling:
Heat 2 tbsp olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and sauté for 1 minute. - Season the Beans:
Stir in the black beans, cumin, chili powder, smoked paprika, and salt. Add the water or vegetable broth and mash some of the beans with the back of a spoon to create a chunky paste. Cook for 2-3 minutes until the mixture is thickened. Remove from heat. - Assemble the Tacos:
Lay out the tortillas and spread 2-3 tbsp of the black bean mixture on half of each tortilla. Sprinkle with a generous amount of shredded cheese and fold the tortilla in half to create a taco shape. - Fry the Tacos:
Heat a large skillet over medium heat with enough olive oil to coat the bottom. Place the tacos in the skillet and cook for 2-3 minutes per side, or until golden and crispy. Work in batches if necessary, adding more oil as needed. - Serve:
Serve the crispy tacos hot with your favorite toppings and dips, such as salsa, guacamole, sour cream, and lime wedges.
