Ingredients

Units Scale

For the Crust:

  • 1 can (16.3 oz) refrigerated biscuit dough (such as Pillsbury Grands)

For the Sausage Gravy:

  • 1/2 pound breakfast sausage
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 teaspoon black pepper (adjust to taste)
  • 1/4 teaspoon salt (optional, to taste)

For the Toppings:

  • 4 large eggs
  • 2 tablespoons milk (for scrambling eggs)
  • 1 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese (optional)
  • 2 tablespoons chopped fresh parsley (for garnish, optional)

Instructions

  1. Prepare the Biscuit Crust:
    • Preheat the oven to 375°F (190°C).
    • Separate the biscuit dough and flatten each biscuit slightly. Arrange them in a greased pizza pan or a large cast-iron skillet, overlapping slightly, to form a crust. Press the seams together to seal.
    • Bake for 10-12 minutes or until the biscuits are lightly golden but not fully cooked. Remove from the oven and set aside.
  2. Make the Sausage Gravy:
    • In a large skillet, cook the breakfast sausage over medium heat until browned and crumbled. Remove the sausage and set aside, leaving the drippings in the skillet.
    • Add butter to the skillet. Once melted, whisk in the flour and cook for 1-2 minutes to make a roux. Gradually whisk in the milk, stirring constantly, until the mixture thickens.
    • Add the cooked sausage back to the gravy. Season with black pepper and salt to taste. Reduce heat to low and simmer for 2-3 minutes.
  3. Prepare the Eggs:
    • In a small bowl, whisk the eggs with milk. Cook them in a nonstick skillet over medium heat, stirring gently, until just set. Set aside.
  4. Assemble the Pizza:
    • Spread the sausage gravy evenly over the biscuit crust.
    • Top with scrambled eggs, followed by shredded cheddar and mozzarella cheeses.
  5. Bake:
    • Return the pizza to the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Garnish with fresh parsley if desired. Slice and serve warm.

Notes

  • For extra flavor, sprinkle cooked bacon bits on top before baking.
  • Swap cheddar for pepper jack if you like a bit of spice.
  • Leftovers can be stored in the fridge for up to 2 days and reheated in the oven or microwave.
