Ingredients

1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 large egg

1 1/2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup rainbow sprinkles (jimmies work best)
Instructions

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

In a large mixing bowl, cream together butter and sugar until light and fluffy (about 2–3 minutes).

Add egg and vanilla extract, mixing until smooth.

In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

Gradually add dry ingredients to the wet ingredients, mixing just until combined.

Fold in the sprinkles.

Scoop dough into 1 ½ tablespoon-sized balls and place on the prepared baking sheets, spacing about 2 inches apart.

Bake for 9–11 minutes, or until edges are just lightly golden. Centers will still look soft – that’s perfect!

Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
