Description

A hearty and colorful Italian-style salad packed with crisp lettuce, fresh vegetables, olives, pepperoncini, salami, and a zesty vinaigrette—perfect as a side or light main course.


Ingredients

  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup cucumber, sliced
  • 1/2 cup black olives or Kalamata olives
  • 1/4 cup sliced pepperoncini
  • 1/2 cup shredded mozzarella or provolone cheese
  • 1/3 cup sliced salami or pepperoni
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine romaine lettuce, cherry tomatoes, red onion, cucumber, olives, pepperoncini, mozzarella, salami, and Parmesan cheese.
  2. In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper until emulsified.
  3. Drizzle the vinaigrette over the salad and toss gently to coat.
  4. Serve immediately or refrigerate for up to 1 hour before serving.

Notes

  • Substitute the salami with grilled chicken or omit for a vegetarian version.
