- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cup cucumber, sliced
- 1/2 cup black olives or Kalamata olives
- 1/4 cup sliced pepperoncini
- 1/2 cup shredded mozzarella or provolone cheese
- 1/3 cup sliced salami or pepperoni
- 1/4 cup grated Parmesan cheese
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Instructions
- In a large bowl, combine romaine lettuce, cherry tomatoes, red onion, cucumber, olives, pepperoncini, mozzarella, salami, and Parmesan cheese.
- In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper until emulsified.
- Drizzle the vinaigrette over the salad and toss gently to coat.
- Serve immediately or refrigerate for up to 1 hour before serving.

- Substitute the salami with grilled chicken or omit for a vegetarian version.
